This really is an intensely flavourful dish. Wild boar is a meat with real oomph. It’s darker than pork with a richer, nuttier flavour. However, it also pairs beautifully with those ingredients that marry so well with pork, in this case cider and apple. I’ve also added celeriac to balance out the dish with its autumn mellowness. This one’s a corker.

INGREDIENTS:

Flour, semolina, egg, olive oil, wild boar, bacon, chicken stock, vegetable oil, onions, garlic, celeriac, carrot, leeks, celery, tomatoes, salt, pepper, bay leaf, sage, apples, cider, rosemary, parmesan, butter. In our GF version flour and semolina are replaced with gluten-free flour and xanthan gum
