Raviolo of oxtail and field mushrooms with savoury onions and red wine

A magnificent, rich, decadent and elegant dish.

This is the sort of dish on which my reputation as a pasta chef was built. It’s an amalgam of French and Italian cooking styles where a mousse-based filling is combined with a soft and silky single raviolo. In this case the filling is a mousse using oxtail which has been braised in red wine and beef stock with field mushrooms and other aromatic herbs and vegetables. The raviolo is served on a bed of caramelised onions and dressed with a beautifully reduced stock sauce. It’s elegant and refined and intensely flavourful.

INGREDIENTS:

Flour, semolina, egg, olive oil, oxtail, onion, carrot, celery, leek, celeriac, mushroom, orange zest, bay leaf, salt, pepper, chicken, cream, tarragon, shallots, red wine, cornflour, bacon, chicken livers, vegetable oil, parsley
