This is an epic way to round off a meal; an indulgent chocolate cremeux topped with hazelnut cream.
This is a great combination of wintry Italian flavours. We’ve slow-cooked some intense greens, cavolo nero and kale to soften them gently and bring out their sweetness. We’ve then combined them with a beautiful, creamy ricotta to make the filling of our pansotti. The sauce is intensely nutty and creamy too. It’s a fantastic mix of smashed walnuts, milk, bread, olive oil and garlic. The combination is just wonderful and makes me think of taking a winter walk in a northern Italian forest.
INGREDIENTS:
Flour, semolina, egg, olive oil, salt, pepper, onion, butter, olive oil, purple sprouting broccoli, cavolo nero, kale, ricotta, parmesan, nutmeg, walnuts, milk, garlic, lemon juice
