Combine OTTO’s antipasti box with its tempting mix of freshly baked focaccia, mixed olives and three different styles of tapenade with a double portion of our paccheri with wild garlic leaf, pine nuts, parmesan and olive oil. We love the arrival of spring not just for longer days but also because for a fleeting few weeks wild garlic is in season. Combining wild garlic with pine nuts and parmesan makes the most fantastic pesto. However, in this dish we’re using the ingredients separately and they work brilliantly with cylindrical paccheri to create a fresh and satisfying vegetarian dish.

INGREDIENTS:

Paccheri with wild garlic leaf, pine nuts, parmesan and olive oil: Flour, semolina, egg, olive oil, garlic leaf, pine nuts, parmesan, gluten-free flour, bay leaf, salt, pepper. In our GF version flour and semolina are replaced with gluten-free flour and xanthan gum.

Antipasti box:

  • Mixed Italian Olives: Olives, salt, sunflower oil
  • Focaccia with a rosemary and garlic drizzle: flour, salt, yeast, olive oil, rosemary, garlic, tomatoes, shallots, black pepper
  • Red pepper and tomato tapenade: Red peppers, tomatoes, red onions, chillis, garlic, capers, olive oil, salt
  • Classic black olive tapenade: Black olives, garlic, capers, olive oil
  • Artichoke and truffle tapenade: Artichokes, courgettes, garlic, lemon zest and juice, salt, black pepper, truffle oil, olive oil, vinegar
