This dish is a lovely amalgam of my favourite ingredients from southern Europe. I love the gentle briny flavour of octopus and it pairs beautifully with orange zest, fennel and chilli. The sauce is olive oil based, and in fact I would describe it as more of a dressing than a sauce. We use this season’s newly made olive oil to add an extra layer of freshness.

INGREDIENTS:

Standard: Flour, semolina, egg, olive oil, salt, pepper, octopus, orange zest and juice, lemon zest, lime zest, garlic, chilli, red onion, fennel, basil
